 French Onion Soup

The weather is starting to get brisk and the leaves are falling.  What a better time to have soup that will warm you to the bone.  This is such a simple recipe, you will want to make it again and again.   Just make sure you love onions!

 Ingredients:

  • 3 tbs margarine (butter)
  • 4 cups onions thinly sliced
  • 5 cups beef broth
  • 1 cube Beef Bouillon or 1 tsp instant Beef Bouillon
  • 1 tsp Worcestershire sauce
  • 4 oz. Swiss Cheese shredded (or whatever cheese you like)
  • 6 slices of French Bread, toasted (I use seasoned croutons)
  • 1/4 cup Parmesan cheese, grated
  • Dash pepper

Directions:

  1. Melt margarine in large pan or dutch oven over medium heat.
  2. Add onions and cook 15 minutes or until onions are golden brown
  3. Add broth, bouillon cube, Worcestershire sauce and pepper
  4. Bring to a boil and reduce heat, cover and simmer 20-25 minutes
  5. In medium bowl, combine cheeses and set aside

To Serve:

  • Place 6 ovenproof bowls on cookie sheet
  • Ladle soup into bowls
  • Top each bowl with a slice of toasted French bread/Croutons
  • Sprinkle each with about 2 tbs of cheese mixture
  • Broil about 3-5 inches from heat for about 1-3 minutes until cheese is bubbly.  Serve and enjoy
