French Onion Soup
The weather is starting to get brisk and the leaves are falling. What a better time to have soup that will warm you to the bone. This is such a simple recipe, you will want to make it again and again. Just make sure you love onions!
Ingredients:

3 tbs margarine (butter)

4 cups onions thinly sliced
- 5 cups beef broth

1 cube Beef Bouillon or 1 tsp instant Beef Bouillon

1 tsp Worcestershire sauce

4 oz. Swiss Cheese shredded (or whatever cheese you like)
- 6 slices of French Bread, toasted (I use seasoned croutons)
- 1/4 cup Parmesan cheese, grated
- Dash pepper
Directions:
- Melt margarine in large pan or dutch oven over medium heat.
- Add onions and cook 15 minutes or until onions are golden brown
- Add broth, bouillon cube, Worcestershire sauce and pepper
- Bring to a boil and reduce heat, cover and simmer 20-25 minutes
- In medium bowl, combine cheeses and set aside
To Serve:
- Place 6 ovenproof bowls on cookie sheet
- Ladle soup into bowls
- Top each bowl with a slice of toasted French bread/Croutons
- Sprinkle each with about 2 tbs of cheese mixture
- Broil about 3-5 inches from heat for about 1-3 minutes until cheese is bubbly. Serve and enjoy
